Broad beans are an excellent source of protein and fibre. Combined with avocado which is rich in monounsaturated fats (MUFAs) and antioxidants, this spread is packed full of great nutrients. It works well over bread, salads or as a dip with crackers.
Ingredients
200g fresh broad beans
1 medium ripe avocado – peeled and roughly chopped
1 tbsp lemon juice
3 tbsp olive oil
1/2 red onion or 2 spring onions – chopped
Method
Bring to boil a large saucepan of salted water. Blanch the beans for 2 mins – to lightly cook, refresh them in cold water and drain. Then peel the beans and set aside about 1/4 cup to garnish. The rest should go in a blender with the chopped up avocado, lemon juice, 2 tbsp olive oil. Blend until smooth.
Meanwhile, heat up 1tbsp olive oil in a frying pan and fry the spring/red onion for a couple of minutes, adding the reserved broad beans right at the end.
Add the broad bean/avocado mash to the plate and spoon the onions, reserved broad beans on top and serve.
